- 2 oz White Rum
- 0.75 oz Fresh Lime Juice
- 0.5 oz Passion Fruit Syrup (or unsweetened passion fruit purée)
- 8-10 Fresh Mint Leaves
- Top Club Soda
How to make a Passion Fruit Mojito
- Add the mint, fresh lime juice and passion fruit syrup to a Collins glass. Press the mint gently just until aromatic; do not shred it.
- Add the white rum and fill the glass with crushed ice, leaving enough room for soda.
- Top with club soda and give the drink one gentle lift from the bottom to blend the fruit and rum without bruising the mint.
- Garnish with a mint sprig, lime wheel and a restrained spoonful of passion fruit pulp, then serve immediately.
