Ingredients
- 2 oz Blanco Tequila (100% agave)
- 1.5 oz Pineapple Juice (chilled, unsweetened if possible)
- 0.75 oz Fresh Lime Juice
- 0.5 oz Cointreau or Orange Liqueur
- 0.25 oz Agave Syrup (adjust to the pineapple juice)
- 2 thin coins Fresh Jalapeño (seeded for gentler heat)
How to make a Spicy Pineapple Margarita
- Run a lime wedge around half the rim of a rocks glass. Dip the moistened half in chili-lime seasoning or flaky salt, then fill the glass with fresh ice.
- Add two thin jalapeño coins to a shaker and press them gently with a muddler for about 10 seconds. Avoid crushing the pepper into a pulp, which can make the drink harsh.
- Add tequila, pineapple juice, lime juice, orange liqueur and agave syrup. Fill with ice and shake hard for 12 seconds, until the shaker is very cold.
- Fine-strain over the prepared fresh ice. Garnish with a pineapple wedge, lime wheel and a thin jalapeño coin, then serve immediately.

Pro tip
Pineapple softens jalapeño heat, so start with only two thin coins and muddle briefly. Remove the seeds and white ribs for a greener, gentler spice; add a third coin only after tasting the balance.
