White Peach Rosemary Bellini mocktail recipe
Velvety white peach and a restrained rosemary syrup in a cold sparkling flute.

Ingredients
- 2 oz white peach purée
- ½ oz rosemary simple syrup
- ¼ oz fresh lemon juice
- 3 oz chilled sparkling white grape juice
How to make it
- Chill a champagne flute and all ingredients before building; this drink has no ice to rescue warm ingredients.
- Add white peach purée, rosemary syrup and lemon juice to the flute.
- Stir gently until the purée is smooth and even.
- Pour the sparkling white grape juice slowly down the inside of the glass.
- Add the peach slice and rosemary tip, then serve immediately.

Why this balance works
Peach purée has a soft, rounded sweetness that needs both acid and bubbles to stay lively. Lemon provides the edge; chilled sparkling white grape juice makes the texture feel lighter. Rosemary is useful only in a small dose. It should show up as a quiet piney aroma behind the fruit, not turn the flute into a herb garden. If your peach purée is sweetened, reduce the rosemary syrup first.
Technique to keep
This is a temperature and texture drink. Blend or sieve peach purée until it is completely smooth, then chill it thoroughly. A grainy purée settles in the bottom of the flute and makes the final drink look careless. Build the still base first, then add bubbles slowly. Fast pouring makes the drink foam over while rough stirring drives its carbonation away.
