Virgin Piña Colada mocktail recipe
Pineapple, coconut cream and lime blended into a cold, clean tropical serve.

Ingredients
- 4 oz chilled unsweetened pineapple juice
- 2 oz well-stirred coconut cream
- ¾ oz fresh lime juice
- 1½ cups crushed ice
How to make it
- Chill the pineapple juice and hurricane glass before you start.
- Add the juice, stirred coconut cream, lime juice and crushed ice to a blender.
- Blend on high for 15 to 20 seconds, just until smooth and frothy.
- Pour into the chilled glass and garnish with the pineapple leaf and lime.
- Serve straight away, while the texture is still light and icy.

Why this balance works
Coconut cream brings satisfying body, but it can make pineapple taste flat. Lime is not optional here: it gives the drink a clean edge and stops the finish becoming heavy. If your pineapple juice is very sweet, add another bar spoon of lime before adding more ice.
Technique to keep
Coconut cream naturally separates, so stir it smooth before measuring. Keep every liquid cold and blend briefly; a long blend melts the ice and turns a frozen drink into a thin one. You want a fine, spoonable slush, not a milkshake or a pool of foam.
