Ingredients
- 2 oz zero-proof bitter-orange aperitif
- 3 oz dry sparkling non-alcoholic wine
- 1 oz chilled sparkling water
How to make it
- Fill a large wine glass generously with firm ice.
- Pour in the bitter-orange aperitif.
- Add the chilled sparkling non-alcoholic wine, then the sparkling water.
- Give one bottom-to-top lift with a bar spoon.
- Tuck an orange wheel into the glass and serve immediately.

Why this balance works
