Virgin Margarita mocktail recipe
Fresh lime, mandarin, agave and a small saline lift over clear ice.
Method: Shake · Glass: Rocks glass · Time: 4 minutes · Difficulty: Intermediate
Ingredients
- 1 oz fresh lime juice
- ¾ oz fresh mandarin juice
- ½ oz agave syrup
- 1½ oz chilled jasmine tea
- 3 drops 20% saline solution
How to make it
- Salt only half of a chilled rocks-glass rim, leaving the other half clean.
- Add the lime, mandarin, agave, jasmine tea and saline to a shaker with ice.
- Shake for 10 to 12 seconds, then strain over one large fresh ice cube.
- Place the lime wheel on the unsalted edge of the glass.
Garnish
A dehydrated lime wheel and a half salt rim
Why this balance works
Mandarin provides fragrant sweetness before extra agave is needed. The saline does not make the drink salty; three drops soften sharp citrus bitterness so the fruit can read more clearly. Keep the drink brisk—the point is a rocks drink with tension, not orange-lime soda.
Technique to keep
Salt only half the rim. The clean side lets a drinker decide whether a sip includes salt, which prevents the whole drink becoming salty after a few minutes. It also gives you a useful way to taste how salt changes acidity and perceived sweetness in real time.
