Virgin Lemon Drop mocktail recipe
A dry, shaken lemon coupe with a clean half sugar rim and orange-peel aroma.

Ingredients
- ¾ oz fresh lemon juice
- ½ oz simple syrup
- ¼ oz verjus blanc
- 2 drops saline solution
- as needed fine sugar
- to fill ice cubes
How to make it
- Chill a coupe and moisten only half of its outside rim with a lemon wedge.
- Press that half rim into a shallow plate of fine sugar, keeping sugar out of the bowl.
- Shake lemon juice, simple syrup, verjus and saline with ice until the tin is cold.
- Fine strain into the coupe and express the lemon twist over the surface.

Why this balance works
A half rim gives the drink two ways to be tasted: one sip is dry and bracing, the next can touch sugar if you want it. That is more useful than sweetening the whole bowl. Verjus softens the straight lemon line without making the drink taste like grape juice, while two drops of saline tidy up the lemon’s bitter peel note. If the lemons are particularly sharp, add one teaspoon of syrup rather than covering the entire rim in more sugar.
Technique to keep
Build the rim on the outside only. Sugar inside the glass dissolves immediately and makes the first sips erratic. Use a well-chilled coupe, fresh ice and a fine strain so the drink lands cold and clear. The lemon twist is an aroma finish: hold it over the surface, bend it once and discard it or rest it on the rim. There is no need to torch, flame or add a decorative pile of sugar.
