Virgin Daiquiri mocktail recipe

Ingredients
- 2 oz strong chilled green tea
- ¾ oz fresh lime juice
- ½ oz 2:1 demerara syrup
How to make it
- Chill a coupe glass in the freezer or with ice and water.
- Add the tea, lime juice and syrup to a shaker full of firm ice.
- Shake hard for 12 to 15 seconds until the tin feels very cold.
- Fine strain into the chilled coupe so no ice shards or pulp reach the glass.
- Float a thin lime coin on the surface.

Why this balance works
This is a lime sour first; the tea is there for a dry, lightly tannic finish, not as a pretend rum. The rich demerara syrup keeps the drink from tasting hollow, while the shake supplies enough dilution to make the citrus feel rounded rather than aggressive.
Technique to keep
A short drink has nowhere to hide. Fill the shaker with firm ice and shake with intent so the drink gets cold and diluted in the same moment. Fine straining is worth the extra step: it removes tiny ice fragments and lime pulp, leaving a clear, polished coupe instead of a rough one.
