Raspberry Lemon Fizz mocktail recipe
Seed-free raspberry cordial, lemon and cold soda for a bright, uncomplicated highball.

Ingredients
- 1½ oz seed-free raspberry cordial
- ¾ oz fresh lemon juice
- 3 oz chilled club soda
- to fill large ice cubes
How to make it
- Make the cordial by warming raspberries with equal parts sugar and water, then strain it through a fine sieve until seed-free and chill it completely.
- Add cold cordial and lemon juice to a chilled highball.
- Fill with large ice cubes.
- Top slowly with cold club soda and lift once with a bar spoon.
- Add the raspberry and lemon peel, then serve straight away.

Why this balance works
Raspberry can taste jammy very quickly, so the lemon needs to be clean and the soda needs to be cold. A seed-free cordial gives fruit intensity without gritty pulp. If your cordial is very sweet, use a little more lemon before adding more soda; the drink should finish fresh rather than like raspberry lemonade.
Technique to keep
Fine straining gives a berry drink a very different texture. It removes seeds and tough fibre while keeping the colour and aroma of the fruit. Keep the cordial and soda cold, add carbonation last, and lift once. That sequence keeps a fruit-forward highball lively instead of making it flat and foamy.
