- Set the pear fan against the inside wall and add the ginger sliver.
- Serve while the soda is still lively.
Garnish
A thin pear fan and a small crystallised ginger sliver
Why this balance works
Pear has a soft, almost quiet sweetness, so the ginger and lemon are what give the drink a shape. Honey is only there to make the pear feel fuller, not to turn it into a sweet cider. If the juice is commercial and already sweet, begin without honey and add it only after tasting the still base.
Technique to keep
Shake the still ingredients first so dense pear juice, sharp ginger and honey are fully joined before bubbles arrive. Then top with soda over fresh ice. That separation gives you a chilled, integrated drink with a dry finish rather than a heavy, cloudy pear soda.
