Watermelon Mint Cooler mocktail recipe
A transparent, lime-led watermelon highball that stays crisp instead of pulpy.

Ingredients
- 3 oz fresh strained watermelon juice
- ¾ oz fresh lime juice
- ¼ oz simple syrup
- 3 drops 20% saline solution
- 2 oz chilled club soda

How to make it
- Blend seedless watermelon briefly, then pass it through a fine sieve; chill the juice before using.
- Shake the watermelon juice, lime, syrup and saline with ice for 8 seconds.
- Double strain into an ice-filled highball.
- Top with cold club soda and lift once from the bottom with a bar spoon.
- Garnish with mint and watermelon, then serve while the drink is sharply cold.

Why this balance works
Watermelon is mostly water, which is why a drink made from it can taste big at the first sip and disappear a second later. Lime creates a clean line through the fruit, while a few drops of saline make the melon read more clearly without making the drink taste salty. Keep the syrup modest. If the watermelon is sweet and ripe, it may not need the full quarter ounce.
Technique to keep
Straining is the point of this recipe. Watermelon pulp carries a lot of texture but not much structure, and it becomes foamy and dull after shaking. Fine straining gives the drink its clear pink look and a cleaner finish. Saline is not a shortcut for seasoning everything: use a measured solution and start with drops. It should make the fruit feel more present, never announce itself.
