Passion Fruit Vanilla Mule mocktail recipe
Tart passion fruit, warm vanilla and ginger beer built for a very cold copper mug.

Ingredients
- 1½ oz passion fruit pulp
- ½ oz vanilla syrup
- ½ oz fresh lime juice
- 4 oz chilled spicy ginger beer
- to fill crushed ice
How to make it
- Chill a copper mug and fill it three-quarters full with crushed ice.
- Add passion fruit pulp, vanilla syrup and lime juice.
- Stir briefly to chill the still ingredients.
- Top with cold ginger beer and lift once from the bottom.
- Add the passion fruit and mint, then serve immediately.

Why this balance works
Passion fruit is sharp enough to carry a drink, but it can become tiring if lime and ginger both push too hard. Vanilla rounds the edges without making the mug taste like dessert. Start with the stated lime amount; if the pulp is especially tart, add a bar spoon more syrup instead of pulling back the fruit.
Technique to keep
Copper feels cold quickly, but it also warms quickly in a hand. Pre-chill the mug, use cold ginger beer and keep the crushed ice packed tightly. Stir the still base first, then add the bubbles last—otherwise the passion pulp and carbonation can foam over before the drink is combined.
