Uncharted Seas recipe
A fruit-driven Blood and Sand reinterpretation finished with a tannic red-wine float.

Ingredients
- 1.5 oz Single Malt Scotch
- 4 dashes Barrel-Aged Bitters
- 1 Orange Wheel
- 4 Brandied Cherries
- 0.25 oz Simple Syrup
- 0.75 oz Full-Bodied Red Wine (for a final float)
How to make a Uncharted Seas
- Add the orange wheel, brandied cherries and simple syrup to a shaker tin and muddle thoroughly.
- Add the Scotch, barrel-aged bitters and ice.
- Shake hard, then double strain into a rocks glass over one large ice cube.
- Float the red wine over the back of a barspoon, then garnish with a dehydrated orange slice and brandied cherry.

Dehydrated orange slice and a brandied cherry.
Pro tip
The red wine should be floated gently at the end. Its tannin offsets the muddled fruit and keeps the finish dry enough for the Scotch to remain present.

Uncharted Seas was created by Andy Bixby at Jack Rose Dining Saloon as a Blood and Sand-derived drink that uses muddled fresh fruit and a red-wine float instead of orange juice and Cherry Heering.
