Ingredients
- 2 oz London Dry Gin (Choose a gin whose botanicals you enjoy on their own)
- 4-5 oz Premium Indian Tonic Water
- 1 Grapefruit Peel
- 1 Rosemary Sprig
- 2 Juniper Berries (Optional garnish)
How to make a Spanish G&T
- Fill a copa glass completely with large, cold ice.
- Pour the gin over the ice and gently rotate the glass once.
- Add the grapefruit peel and rosemary so their aromas open over the drink.
- Tilt the glass and pour the tonic slowly down the side to protect the carbonation.
- Give one gentle stir and finish with the juniper berries.

Grapefruit peel, rosemary and two juniper berries.
Pro tip
Keep the garnish purposeful: one citrus peel and one herb can show more character than an overcrowded glass. Chill the tonic before opening it.
