Virgin Strawberry Daiquiri mocktail recipe

Ingredients
- 4 oz frozen strawberries
- ¾ oz fresh lime juice
- ½ oz demerara syrup
- ¼ cup cold water
- ½ cup crushed ice
How to make it
- Add frozen strawberries, lime, demerara syrup and cold water to a blender.
- Blend briefly until the fruit breaks down, then add crushed ice.
- Blend just until smooth and thick; stop before the ice turns watery.
- Pour into a chilled coupe and add the strawberry immediately.

Why this balance works
Frozen berries provide more body than fresh berries and let you use less ice, so the result tastes like strawberry rather than diluted fruit water. Lime should be clear but not sharp enough to erase the berry. Demerara syrup has a slightly deeper note than plain syrup and is useful with frozen fruit, which can taste flatter when very cold. If the berries are unusually sweet, reduce the syrup before adding extra lime.
Technique to keep
Add the fruit before the crushed ice. That gives the blender a smooth base to work with and prevents a large piece of ice from sitting above unblended berry. Frozen strawberries are already doing part of the chilling job, so use only enough crushed ice to create a spoonable surface. A cold coupe buys a few more minutes before the blend softens; serve it as soon as it is poured rather than holding it in the blender.
