Virgin Negroni mocktail recipe
A ruby-red, bitter-sweet aperitif built around botanicals, verjus and orange oil.

Ingredients
- 1½ oz zero-proof red bitter aperitif
- 1 oz strong chilled rooibos and gentian tea concentrate
- ½ oz white verjus
How to make it
- Add the bitter aperitif, tea concentrate and verjus to a mixing glass with plenty of ice.
- Stir for 20 to 25 seconds until very cold and integrated.
- Strain over one large clear ice cube in a chilled rocks glass.
- Express an orange peel across the surface and rest it in the drink.

Why this balance works
This drink is built for bitterness and aroma, not a literal copy of another cocktail. The red aperitif supplies the bitter-orange centre, while the tea concentrate gives the finish a dry botanical grip. Verjus is gentler than lemon, so it brightens the drink without turning it into a sour. If your aperitif is already very sweet, reduce the verjus slightly and let the orange oil provide the final lift.
Technique to keep
The useful lesson is equal weight rather than equal ingredients: each part of a bitter aperitif drink needs a job. Here the aperitif carries bitter citrus, the tea carries drying structure and the verjus carries acidity. Stirring with plenty of ice joins them without trapping air. Expressing the orange peel at the end puts its aroma on the surface, so it arrives before the bitterness on every sip.
