Virgin Old Fashioned mocktail recipe
Rooibos, toasted oak, demerara and orange built as a slow, stirred sipper.

Ingredients
- 3 oz strong chilled rooibos tea
- ½ oz 2:1 demerara syrup
- ½ oz strong toasted-oak tea concentrate
- 2 dashes alcohol-free aromatic bitters
How to make it
- Add rooibos, demerara syrup, toasted-oak tea and bitters to a mixing glass filled with ice.
- Stir calmly for about 20 seconds, until the outside of the glass is very cold.
- Strain over one large clear ice cube in a chilled rocks glass.
- Express the orange peel over the surface, wipe it around the rim and rest it in the glass.

Why this balance works
A good zero-proof stirred drink needs body as well as flavour. Rooibos brings an earthy, slightly drying base, while rich demerara syrup gives the drink enough weight to feel deliberate rather than thin. Toasted-oak tea is used sparingly for aroma, not to turn the drink woody. The orange oil is important: it brightens the first sip and makes the darker notes feel more open.
Technique to keep
Stirring is how you control dilution in a spirit-forward style drink. A gentle, steady stir chills the liquid and melts just enough ice to round the syrup, tea and bitters together. Do not shake it: shaking would add foam and cloudiness that work against the clear, measured style. The large serving cube slows further melt so the last sip is not much weaker than the first.
