Virgin Mai Tai mocktail recipe
Black tea, orgeat, lime and pineapple over pebble ice for a nutty tropical build.

Ingredients
- 1 oz strong chilled black tea
- 1 oz pineapple juice
- ¾ oz fresh lime juice
- ½ oz almond orgeat
- ¼ oz orange cordial
- to fill pebble ice
How to make it
- Shake tea, pineapple juice, lime, orgeat and orange cordial with ice until cold.
- Fill a double rocks glass with pebble ice and strain the drink over it.
- Add more pebble ice until the glass is mounded, then tuck in the lime shell.
- Clap the mint, place it beside the lime and serve immediately.

Why this balance works
A Mai Tai needs lime and orgeat to be audible at the same time. Pineapple adds fruit but should not take over the nutty centre, which is why the tea gives a small dry edge in place of a spirit base. Keep orange cordial modest; too much turns the drink into orange-pineapple juice. Pebble ice slowly relaxes the concentrated sour, so the first sip should taste a little more lime-forward than the last.
Technique to keep
Pebble ice is part of the recipe, not just decoration. It chills the drink quickly and creates deliberate dilution as you sip, which softens the tea and orgeat together. Shake the still base before it reaches that ice; otherwise the orgeat can sit in a sweet layer at the bottom. Mint is only a nose garnish here—clap it once instead of muddling it through the drink, where it would compete with the almond.
