Virgin Blue Hawaiian mocktail recipe
Pineapple, coconut, lime and a restrained blue-citrus note in a frozen hurricane glass.

Ingredients
- 1½ oz pineapple juice
- 1 oz cream of coconut
- ½ oz fresh lime juice
- ¼ oz alcohol-free blue citrus syrup
- ¾ cup crushed ice
How to make it
- Add pineapple juice, cream of coconut, lime juice and blue citrus syrup to a blender.
- Blend briefly, add crushed ice and blend only until smooth and spoonable.
- Pour into a chilled hurricane glass immediately.
- Add the pineapple wedge and lime wheel; serve before the blend loosens.

Why this balance works
Cream of coconut is both sweet and heavy, so lime has to be present before the ice goes in. Pineapple supplies the main fruit note; the blue citrus syrup should stay small enough that it does not turn the drink into candy. Taste the liquid base before blending. It should be a little brighter and a little sweeter than you want in the finished glass because crushed ice will soften both edges.
Technique to keep
Use a short blend. Starting with the liquid lets the blender move cleanly before the crushed ice arrives, then the final few seconds give a smooth frost instead of a thin slush. If the drink is too thick to pour, add a tablespoon of pineapple juice—not more ice. The goal is a cold, even texture that holds on a spoon for a moment, not a milkshake.
