Iced Matcha Yuzu Spritz mocktail recipe
Whisked matcha, yuzu and sparkling water with a cold, citrusy finish.

Ingredients
- 1 tsp matcha powder
- 1 oz warm water
- ½ oz yuzu juice
- ½ oz simple syrup
- 3 oz chilled sparkling water
- to fill large ice cubes
How to make it
- Sift matcha into a small bowl, add warm water and whisk until smooth.
- Fill a highball with ice and add yuzu juice and syrup.
- Add sparkling water.
- Pour matcha gently over the ice, add the twist and serve.

Why this balance works
Matcha is grassy and yuzu is sharp, so a half ounce of syrup gives the drink a middle without making it sweet. Use matcha that you would drink on its own; stale powder makes a fizzy drink taste dusty. Lemon plus a little mandarin juice works when yuzu is unavailable.
Technique to keep
Sift and whisk matcha before it reaches the glass. Trying to stir powder through ice leaves clumps. The layered look is temporary, which is fine: the important thing is smooth matcha and cold soda, not a permanent colour gradient.
