Elderflower Cucumber Spritz mocktail recipe
Elderflower cordial, cucumber and lemon in a crisp, pale spritz.

Ingredients
- ¾ oz elderflower cordial
- 1 oz strained cucumber juice
- ¼ oz fresh lemon juice
- 3 oz chilled club soda
How to make it
- Use a peeler to make a cucumber ribbon and press it against the inside of a wine glass.
- Fill the glass with large ice and add elderflower cordial, cucumber juice and lemon.
- Top with cold club soda and lift once from the bottom.
- Serve immediately while the cucumber remains crisp.

Why this balance works
Elderflower cordial is sweet enough to take over a drink if it is poured like juice. Three-quarters of an ounce gives the floral note without hiding cucumber. Lemon provides a small, clean edge; it should not turn this into a sour. Strained cucumber juice makes the result fresher and less vegetal than muddled slices, while cold soda keeps the finish light.

This spritz is about measured cordial dilution rather than herb muddling. Strain the cucumber first, then build over ice so its delicate flavour stays clean. Add lemon before the soda to check the balance of the still base. Use one vertical lift after topping; long stirring knocks out bubbles and can dislodge the cucumber ribbon.
