Kiwi Mint Cooler mocktail recipe
Strained kiwi, lime and mint aroma in a bright green highball.

Ingredients
- 2 ripe green kiwifruit, peeled
- ¾ oz fresh lime juice
- ½ oz simple syrup
- 4 oz chilled club soda
- to fill large ice cubes
How to make it
- Press peeled kiwi through a fine sieve into a shaker; discard the seeds and fibrous pulp.
- Add lime juice, syrup and ice, then shake for 8 seconds.
- Fine strain into a highball over fresh large ice cubes.
- Top with cold club soda and add a slapped mint sprig and kiwi wheel.

Why this balance works
Kiwi is sharper and more aromatic than it first appears, but its pulp can make a highball feel heavy. Straining gives you the flavour and colour without a gritty finish. Lime should sharpen the kiwi rather than announce itself separately. If your fruit is very ripe and sweet, hold back a little syrup; the goal is tart, clean fruit with a dry soda finish.
Technique to keep
Do not muddle kiwi directly in the serving glass. Its tiny seeds and fibrous core stay in suspension and get more noticeable as the drink warms. Pressing the peeled fruit through a fine sieve first gives a smoother base. Keep mint out of that base: slap the sprig and use it as a garnish so its aroma arrives at the nose without turning the drink grassy or cloudy.
