Ginger Beer Lime Highball mocktail recipe
Cold ginger beer, lime and a small amount of syrup built over plenty of ice.

Ingredients
- 4 oz chilled ginger beer
- ¾ oz fresh lime juice
- ¼ oz simple syrup
- 2 dashes alcohol-free aromatic bitters
- to fill large ice cubes
How to make it
- Fill a chilled highball almost to the top with large ice.
- Add lime juice, syrup and bitters.
- Pour chilled ginger beer down the inside of the glass.
- Lift once with a bar spoon, add the lime wheel and serve.

Why this balance works
Ginger beer varies a lot. Start with a quarter ounce of syrup only if your bottle is dry and spicy; leave it out if the ginger beer is already sweet. Lime keeps the ginger from feeling heavy, and a few dashes of alcohol-free bitters give the finish a dry spice note. Make the drink cold before the ginger beer goes in, because warm mixers lose bubbles quickly.
Technique to keep
Build the non-carbonated ingredients first, then pour the ginger beer over ice and move the spoon once from bottom to top. A long stir knocks out the bubbles and turns the lime-syrup layer flat. Large ice is helpful because it keeps the serve cold without watering the ginger at once.
