Fresh espresso poured over cold tonic and ice for a bitter, bright coffee highball.
Method: Build · Glass: Highball glass · Time: 4 minutes · Difficulty: Beginner
Ingredients
- 2 oz freshly brewed espresso
- 4 oz chilled tonic water
- to fill large clear ice cubes
- 1 orange peel
How to make it
- Fill a highball with large ice and add chilled tonic water.
- Let freshly brewed espresso sit for 20 seconds so it is no longer steaming hard.
- Pour the espresso gently over the back of a spoon onto the tonic.
- Express orange peel over the drink and serve without stirring.
Garnish
A short orange peel
Why this balance works
Espresso tonic is intentionally bitter. The tonic should be cold and not overly sweet, while the espresso should be fresh enough to carry aroma but not so hot that it immediately flattens the drink. Orange peel links the coffee roast to the tonic’s citrusy bitterness. If the result feels too sharp, choose a medium-roast espresso rather than adding syrup.
Technique to keep
Cold tonic first, espresso second. Pouring espresso over a spoon gives the drink a visible gradient and protects the initial crema for a short time. It will blend as the ice moves—that is normal. Do not stir the glass before serving; the drink is designed to change from coffee-forward at the top to crisp tonic lower down.
