Orange Bitter Brunch Spritz mocktail recipe
Blood orange, grapefruit, tea bitters and soda for a dry brunch-time spritz.

Ingredients
- 1½ oz blood orange juice
- ¾ oz pink grapefruit juice
- ½ oz strong chilled chamomile tea
- ¼ oz fresh lemon juice
- 3 oz chilled sparkling water
- to fill large ice cubes
How to make it
- Fill a wine glass with large ice.
- Add the juices, chilled chamomile tea and lemon.
- Top with sparkling water and lift once.
- Express the orange peel over the surface and rest it on the rim.

Why this balance works
Orange juice can become soft and sweet in a large wine glass, so grapefruit and lemon keep it pointed. A small amount of strong chilled chamomile brings a pleasantly dry, floral note without requiring a hard-to-find bitter cordial. The finished drink should be bright enough for food, not syrupy. If the blood oranges are very sweet, add another teaspoon of grapefruit juice.
Technique to keep
Make the tea ahead and chill it completely. Hot tea melts ice and takes the bubbles out of a spritz. Build all of the still ingredients over ice, then add sparkling water last and lift once. The orange peel contributes more aroma when it is expressed over the surface than when it is simply dropped in.
