Grapefruit Sage Spritz mocktail recipe
Ruby grapefruit, sage and cold soda with bitterness managed rather than buried.

Ingredients
- 2 oz fresh ruby grapefruit juice
- ½ oz light sage syrup
- 3 drops 20% saline solution
- 3 oz chilled sparkling water
- to fill large clear ice cubes
How to make it
- Chill a stemmed wine glass and the sparkling water.
- Add grapefruit juice, sage syrup and saline to the glass.
- Fill with large clear ice cubes.
- Top with cold sparkling water and lift once from the bottom with a bar spoon.
- Add the sage and grapefruit, then serve without further stirring.

Why this balance works
Grapefruit should stay brisk and a little bitter. The saline softens the sharpest pith note, which means the drink needs less syrup than a pink citrus soda. Keep the sage light; it should arrive on the nose before the grapefruit, not turn the whole glass savoury.
Technique to keep
Build sparkling drinks in the order that protects their bubbles: still ingredients first, cold ice second, carbonated ingredient last. A single upward lift is enough. Repeated stirring makes the drink taste flat before the garnish has had time to do its work.
