Coconut Water Cucumber Refresher mocktail recipe
Coconut water, cucumber and lime with a crisp, lightly sparkling finish.

Ingredients
- 3 oz chilled coconut water
- 1½ oz strained cucumber juice
- ½ oz fresh lime juice
- ¼ oz simple syrup
- 2 oz chilled club soda
- to fill large ice cubes
How to make it
- Press a cucumber ribbon against the inside of a chilled highball and add ice.
- Add coconut water, cucumber juice, lime and syrup.
- Top with club soda and lift once with a bar spoon.
- Serve immediately.

Why this balance works
Coconut water is mild, so cucumber needs to be strained rather than simply sliced into the glass. Lime gives the drink a clear edge, and a quarter ounce of syrup is enough to keep it from tasting watery without covering the cucumber. Taste before soda: it should be slightly too concentrated because the bubbles and ice will soften it.
Technique to keep
Strain cucumber juice through a fine sieve or clean cloth so the drink stays crisp instead of seedy or foamy. The ribbon is for aroma and visual shape; it is not a replacement for cucumber juice. Club soda goes in last and gets only one lift, otherwise the clean texture becomes flat quickly.
