Blueberry Basil Spritz mocktail recipe
Blueberry reduction, lemon and basil aroma in a dry, dark-berry spritz.

Ingredients
- 1½ oz chilled blueberry reduction
- ½ oz fresh lemon juice
- ½ oz strong chilled green tea
- 3 oz dry sparkling water
- to fill large clear ice cubes
How to make it
- Simmer blueberries with a small splash of water just until they burst, then strain and chill the reduction.
- Add blueberry reduction, lemon and chilled green tea to a stemmed wine glass.
- Fill with large ice cubes.
- Top with dry sparkling water and lift once from the bottom.
- Slap the basil, add it with the blueberries and serve without further stirring.

Why this balance works
A blueberry reduction gives depth, but it also concentrates sweetness. Lemon gives the drink its line, while green tea supplies a dry finish without making the spritz taste like tea. Reduce berries briefly, not until they become jam. The goal is a concentrated, strained fruit base that still has enough tartness to work with bubbles.
