Starboard Light recipe
A Scotch-and-passion-fruit tropical sour with honey and a silky egg-white texture.

Ingredients
- 2 oz Blended Scotch
- 1 oz Fresh Lemon Juice
- 0.5 oz Passion Fruit Syrup
- 0.25 oz Honey Syrup
- 1 Egg White
- 1 scoop Crushed Ice
How to make a Starboard Light
- Add blended Scotch, lemon juice, passion fruit syrup, honey syrup and egg white to a blender jar.
- Add a scoop of crushed ice and blend for about 10 seconds until frothy and chilled.
- Pour into a tall cocktail glass and add a little fresh crushed ice to keep the drink cold.
- Garnish with pineapple and a lightly slapped mint sprig.

Pro tip
Use a soft blended Scotch; heavily peated whisky can overwhelm the honey and passion fruit.
History of the Starboard Light
Starboard Light is a Scotch-led tropical sour associated with Trader Vic’s tradition and is commonly treated as the Port Light’s maritime counterpart.
