Ingredients
- 2 oz Cachaça (An unaged cachaça with fresh sugarcane character)
- 1.5 oz Fresh Passion Fruit Pulp (Including seeds, when available)
- 0.5 oz Fresh Lime Juice
- 0.75 oz Sweetened Condensed Milk (For body, not excessive sweetness)
- 0.5 cup Crushed Ice
How to make a Batida de Maracujá
- Chill a rocks glass while you prepare the drink. Add the cachaça, passion fruit pulp, fresh lime juice, condensed milk and crushed ice to a blender cup.
- Flash blend for 8 to 10 seconds, just until the drink is smooth, frosty and lightly aerated. It should pour like a frozen cocktail, not a thick milkshake.
- Pour into the chilled rocks glass. Leave a little texture from the crushed ice rather than over-blending it completely.
- Spoon a small amount of passion fruit pulp over the top, add a thin lime wheel, and serve immediately.

Pro tip
Use real passion fruit pulp when possible. Its sharp acidity and aromatic seeds keep the condensed milk from taking over; if your pulp is already sweetened, reduce the condensed milk slightly before blending.

Batida means “shaken” or “mixed” in Portuguese and describes a broad Brazilian family of cold cachaça drinks made with fruit, sweetener and ice. Versions with maracujá—passion fruit—are especially popular for the fruit’s aromatic tartness. While modern Batidas are often blended and may use condensed milk for silkiness, the category is flexible: the important balance is vibrant fruit, fresh-cane cachaça, sweetness, and a deeply chilled texture.
