Virgin Bloody Mary mocktail recipe
A savoury tomato highball that earns its flavour through progressive seasoning.

Ingredients
- 5 oz chilled tomato juice
- ½ oz fresh lemon juice
- 1 tsp vegan Worcestershire-style sauce or tamari
- 2 dashes hot sauce
- 2 drops 20% saline solution
- 1 pinch celery salt
- 1 pinch freshly cracked black pepper
How to make it
- Add the Worcestershire-style sauce, hot sauce, saline, celery salt and pepper to a highball glass.
- Add the lemon juice and tomato juice, then stir until the seasonings are fully dispersed.
- Taste the uniced mixture and adjust hot sauce, lemon or saline only if it needs it.
- Fill the glass with large ice cubes and give the drink one gentle roll or short stir to chill.
- Add the celery and lemon wheel, then serve straight away.

Why this balance works
Tomato juice can be rich yet oddly flat when it is not seasoned deliberately. Lemon gives it lift, while a small amount of umami sauce makes the savoury notes feel fuller without turning the drink soy-forward. Saline and celery salt are not there to make it salty; they sharpen the edges of the tomato. Taste before ice goes in, because one brand of tomato juice can be much saltier or more acidic than another.
Technique to keep
A Bloody Mary is a seasoning exercise, not a fixed formula. Build the spice, acid and savoury components first, then taste the base before dilution changes your perception. Adjust in tiny steps: one dash of hot sauce or one extra drop of saline can be enough. Ice is added only after the drink tastes right, so you are not trying to correct a watered-down glass at the end.
