Smoked Rosemary Citrus Highball mocktail recipe

Ingredients
- 2 oz fresh pink grapefruit juice
- ½ oz fresh lemon juice
- ½ oz rosemary syrup
- ½ oz strong chilled lapsang souchong tea
- 3 oz chilled club soda
How to make it
- Brew a small cup of lapsang souchong for 3 minutes, strain and chill it fully.
- Fill a highball with large ice and add grapefruit, lemon, rosemary syrup and chilled tea.
- Top with cold club soda and lift once from the bottom.
- Clap the rosemary gently, express the grapefruit peel over the glass and add both garnishes.

Why this balance works
Grapefruit already brings enough bitterness, so the smoky tea stays at a half ounce. It should make the citrus feel deeper, not make the drink taste like a campfire. Lemon tightens the grapefruit while rosemary syrup keeps its sharp edge from feeling thin. Taste the still base before soda: it should be a little brighter and more concentrated than the finished highball.
Technique to keep
Use tea for a controlled smoky note instead of trying to burn a garnish at home. A short lapsang steep gives a clean, repeatable layer that can be measured in the glass. Chill it completely before building; hot tea would melt the ice and flatten the soda. Rosemary is an aroma here, so clap the sprig once rather than muddling it. That keeps the highball clear and lets the smoke stay in the background.
