Pomegranate Grenadine Fizz mocktail recipe
Tart pomegranate, house grenadine and soda in a bright fizz that is not just red syrup.

Ingredients
- 1½ oz unsweetened pomegranate juice
- ½ oz homemade grenadine
- ½ oz fresh lemon juice
- 2 dashes orange blossom water
- 3 oz well-chilled sparkling water

How to make it
- Fill a chilled Collins glass with large ice.
- Add pomegranate juice, grenadine, lemon juice and orange blossom water.
- Top with cold sparkling water and lift once to combine without flattening it.
- Add the lemon peel and pomegranate seeds, then serve.

Why this balance works
Pomegranate juice is tart but grenadine is sweet, so the drink needs both lemon and plenty of soda. The goal is a dry ruby fizz with a little floral lift, not a thick, candy-like red drink. If your grenadine is very sweet, start with three-eighths of an ounce.
Technique to keep
Build this in the serving glass so the colour stays bright and the bubbles stay intact. Orange blossom water is powerful: use drops, not a free pour. It should arrive as a perfume after the pomegranate, not take over the glass.
