Mocktail Syrups: How to Build Sweetness Without Flattening a Drink

Choose the right sweetness
A plain 1:1 syrup disappears cleanly, while demerara brings a darker note. Match the syrup to the base instead of reaching for the richest option by default.
Infuse in the syrup, not the glass
Fresh ginger, herbs and warm spices distribute more evenly in a strained syrup than when dry powder or loose leaves are shaken into a finished drink.
Make small labelled batches
Keep syrups refrigerated, label the date and ingredients, and discard any batch that smells, looks or tastes off. Small batches waste less and stay easier to evaluate.
Common mistake
Adding concentrated spice or dry powder directly to the serving glass, creating grit and uneven flavour.
