Club Soda Bitter Highball mocktail recipe
Lemon, alcohol-free bitters and cold soda for a deliberately spare, dry highball.

Ingredients
- ½ oz fresh lemon juice
- ¼ oz simple syrup
- 4 dashes alcohol-free aromatic bitters
- 4 oz chilled club soda
- to fill large ice cubes
How to make it
- Fill a chilled highball with large ice.
- Add lemon juice, syrup and bitters.
- Pour cold club soda down the inside of the glass.
- Lift once with a bar spoon, express the peel and serve.

Why this balance works
This is a dry drink, not lemonade with bubbles. The small syrup measure only rounds the lemon and bitters. If your soda is not very cold, use more ice rather than more syrup; temperature is what keeps this simple build lively.
Technique to keep
Add carbonation last and move the spoon only once from bottom to top. A longer stir removes the bubbles that make a spare highball work. Expressing the peel above the glass gives the first sip its lemon aroma without adding more juice.
