Method: Shake ·
Glass: Coupe glass ·
Time: 5 min ·
Difficulty: Advanced ·
Family: The Daiquiri Family
Ingredients
- 1 1/2 oz Gin
- 1/2 oz Applejack
- 3/4 oz Fresh Lemon Juice
- 1/4 oz Grenadine
- 1 Egg White
How to make a Pink Lady
- Add all ingredients to a shaker without ice and shake hard for 10 seconds.
- Add ice and shake again for 12 to 15 seconds until the tin is very cold.
- Double strain into a chilled coupe.
- Let the foam settle for a moment.
- Garnish with a cherry or a small bitters pattern on the foam.
Garnish
Brandied cherry or a few drops of aromatic bitters.
Pro tip
Dry shake first. The egg white needs a little time without ice to build a proper foam, then the second shake chills and tightens it.
History of the Pink Lady
The Pink Lady was often dismissed as a decorative drink, but early versions used gin and applejack in serious proportions. It belongs to the same pre-Prohibition family as the Clover Club and White Lady.
Flavour profile
Silky, Apple, Lemon, Floral
Variations
- Clover Club — Use raspberry syrup instead of grenadine and omit applejack.
- Pink Lady Fizz — Serve over ice in a highball and top with soda.
- Apple Pink Lady — Use Calvados instead of applejack for a richer orchard note.
