- 2 oz Blended Mezcal
- 0.75 oz Fresh Lemon Juice
- 0.75 oz Honey-Ginger Syrup
- 0.25 oz Aged Mezcal float
How to make a Mezcal Penicillin
- Add mezcal, lemon juice and honey-ginger syrup to a shaker with ice.
- Shake vigorously for 10-12 seconds.
- Strain into a rocks glass over a large cube.
- Float the aged mezcal over the back of a bar spoon.
- Garnish with candied ginger and lemon peel.

Pro tip
Choose a mezcal with fruit and roasted-agave notes rather than the most aggressively smoky bottle; the honey and ginger should still be distinct.
