Maracuya Sour recipe

Ingredients
- 2 oz Pisco
- 0.75 oz Fresh Lime Juice
- 0.75 oz Passion Fruit Purée
- 0.5 oz Simple Syrup
- 0.5 oz Egg White (Optional but recommended)
How to make a Maracuya Sour
- Add pisco, lime juice, passion fruit, syrup and egg white if using to a shaker.
- Dry shake without ice for 15 seconds if using egg white.
- Add ice and shake hard for another 12-15 seconds.
- Double strain into a chilled coupe.
- Garnish with passion fruit and bitters if desired.
Garnish
Passion fruit half and a few drops of aromatic bitters, optional.
Pro tip
Passion fruit varies in acidity and sweetness; taste the purée first and adjust the syrup so the sour stays bright rather than syrupy.
