- 2 oz Gin
- 0.75 oz Fresh Lemon Juice
- 0.75 oz Lavender Honey Syrup (Honey syrup steeped briefly with dried culinary lavender)
How to make a Lavender Bee's Knees
- Add gin, lemon juice and lavender honey syrup to a shaker with ice.
- Shake hard for 12–15 seconds until very cold.
- Double strain into a chilled coupe.
- Garnish with a small lavender sprig and lemon twist.

Keep the lavender light: a short steep is enough. Too much lavender tastes perfumed rather than floral.
