Ingredients
- 2.5 oz London Dry Gin
- 0.5 oz Dry Vermouth (refrigerated after opening)
- 1 dash Orange Bitters (optional)
How to make a Gibson
- Chill a Nick & Nora or coupe glass until it is properly cold.
- Add gin, dry vermouth, and orange bitters to a mixing glass full of solid ice.
- Stir smoothly for 30 to 35 seconds until very cold and clear.
- Strain into the chilled glass without letting ice shards through.
- Garnish with cold cocktail onions and serve immediately.

Pro tip
The onion is not a novelty garnish. Use a crisp, refrigerated cocktail onion and keep its brine out of the drink unless you are deliberately making a Dirty Gibson.

The Gibson's origin is still argued over. Stories connect it to illustrator Charles Dana Gibson, a San Francisco businessman, and several New York bars. What everyone agrees on is simpler: swapping an olive for a pickled onion turns a dry Martini into a noticeably more savory drink.
