- 2 oz London Dry Gin
- 0.75 oz Fresh Lemon Juice
- 0.5 oz Raspberry Syrup
- 0.5 oz Dry Vermouth
- 1 Egg White
How to make a Clover Club
- Add all ingredients to a shaker without ice (dry shake) for 15 seconds to emulsify the egg white.
- Add ice and shake vigorously for another 15 seconds.
- Double strain into a chilled coupe glass.
- Wait for the foam to rise and settle into a smooth cap.
- Garnish with three raspberries on a cocktail pick.

Pro tip
The dry shake is essential for that luxurious foam. Some bartenders reverse dry shake — shake with ice first, then strain out the ice and shake again without it. Both work, but the traditional dry-shake-first method gives a slightly denser foam.
History of the Clover Club
Named after the Clover Club, a men's social club that met at the Bellevue-Stratford Hotel in Philadelphia from the 1880s to the 1920s. The club's members included lawyers, bankers, and journalists. The cocktail fell out of fashion for decades until the craft cocktail revival brought it back — Julie Reiner even named her Brooklyn bar after it in 2008.
