Ingredients
- 60 ml Cuban aguardiente (or unaged white rum)
- 15 ml Fresh lime juice (bright and freshly squeezed)
- 15 ml Raw honey (diluted slightly with warm water if thick)
- 15 ml Water (still water)
How to make a Canchanchara
- Add raw honey and water into a rocks glass and stir until the honey is fully dissolved.
- Pour in the fresh lime juice and Cuban aguardiente or white rum.
- Fill the glass completely with cracked ice.
- Stir briskly for 10 to 15 seconds to chill and dilute the mixture properly.
- Garnish with a fresh lime wedge and serve immediately.

Pro tip

History of the Canchanchara
Emerging from the town of Trinidad during Cuba's nineteenth-century wars for independence, the Canchanchara is widely celebrated as the island's earliest rum-based mixed drink. Originally brewed by Cuban freedom fighters known as mambises, local tradition suggests the concoction combined cane spirit, lime, and wild honey to provide restorative energy and medicinal warmth in the field. While historians debate whether aguardiente or primitive rum was the definitive original base, this rustic elixir laid the foundational template for later Cuban sour classics like the Daiquiri.
