Nespresso's pistachio-flavored capsules show up once a year as a limited edition and disappear before most people get a chance to stock up. The flavor is subtle — nutty, slightly sweet, with a vanilla finish that makes it taste like a pistachio latte without adding any syrup. Once it's gone from the store, you're stuck paying resale prices or waiting another year.
The good news is you can recreate this exact flavor profile at home with any espresso machine or Nespresso pod. The trick is pistachio syrup (not pistachio paste — that's too thick and gritty for coffee) combined with vanilla and steamed milk.
Ingredients
1 Nespresso espresso shot (any intensity you prefer — Ristretto or Roma work well). 1 tablespoon pistachio syrup (Monin or Torani brand). ½ teaspoon vanilla extract or ½ tablespoon vanilla syrup. 6 oz milk of your choice (oat milk froths best and complements the nutty flavor). Optional: crushed pistachios for garnish.
How to Make It
Pull your espresso shot into a mug. While it's brewing, heat and froth your milk — you want it steamed, not boiling. A milk frother, French press (pump the hot milk 20 times), or even a jar you shake vigorously all work.
Add the pistachio syrup and vanilla directly to the espresso shot and stir to combine. Pour the frothed milk over the top, holding back the foam with a spoon, then spoon the foam on last. Sprinkle crushed pistachios on the foam if you want the café presentation.
For an iced version: combine the espresso, pistachio syrup, and vanilla in a glass. Fill with ice, then pour cold milk over the top. Stir once. Skip the frothing — cold foam on top is optional but nice.
Choosing the Right Pistachio Syrup
Monin makes the best pistachio syrup for coffee — it's smooth, not overly sweet, and actually tastes like pistachios instead of generic nut flavoring. Torani's version is slightly sweeter and more artificial-tasting but works in a pinch and is easier to find at regular grocery stores.
Don't use pistachio paste or pistachio butter. They don't dissolve properly in hot liquid and leave a gritty texture. Syrup is specifically designed to mix cleanly into beverages.
If you can't find pistachio syrup locally, order it online — a bottle lasts months since you only use a tablespoon per drink. It also works in lattes, matcha, and even cocktails.
Why Oat Milk Works Best
Oat milk has a natural sweetness and creaminess that complements pistachio without competing with it. Whole dairy milk works too, but it can overpower the subtle nut flavor. Almond milk is too thin and adds a competing nut taste. Oat milk (especially barista blends like Oatly Barista) froths beautifully and lets the pistachio shine.
If you're using dairy, go with 2% or whole. Skim milk froths well but tastes watery next to the rich pistachio-vanilla combination.
Make It a Cocktail
Add 1 oz amaretto or Frangelico (hazelnut liqueur) to the espresso before adding milk. The nut liqueur amplifies the pistachio flavor and adds warmth. Serve it as a dessert drink after dinner — it's essentially a pistachio espresso martini without the shaker.
For a cold cocktail version: shake 1.5 oz vodka, 1 oz espresso, 1 tablespoon pistachio syrup, and ½ oz vanilla liqueur with ice. Strain into a coupe glass. Garnish with three crushed pistachios floating on top.
