7 Best Baileys Cocktails (Plus What NOT to Mix It With)

Baileys Irish Cream is one of those bottles that appears at every holiday gathering and then sits in the cabinet for 11 months. But it's actually a solid cocktail ingredient — creamy, sweet, with coffee and chocolate notes that work in everything from after-dinner drinks to frozen cocktails.
Important: Baileys does expire. Check the date on the bottle. Once opened, it's good for about 6 months in the fridge. If it smells sour or looks chunky, toss it.
Irish Coffee (with Baileys)

What NOT to Mix with Baileys
Citrus juice — the acid curdles the cream in Baileys. Lemon juice, lime juice, and orange juice will all turn it into chunky, unappetizing curds. This is how you make a 'Cement Mixer' shot (a prank, not a real drink).
Tonic water — the quinine and carbonation don't play well with cream liqueurs.
Anything highly acidic — tomato juice, cranberry juice, vinegar-based shrubs. If it's tart, keep it away from Baileys.
Safe mixers: coffee, hot chocolate, Kahlua, vodka, whiskey, cream, ice cream, chocolate liqueur. Anything neutral or sweet works fine.
