Summer Party Cocktails: Batch Recipes for 10-30 Guests

Summer party drinks need three qualities: they should be refreshing (cold, light, citrusy), batch-able (you can't shake individual cocktails for 30 guests), and crowd-pleasing (not everyone likes bitter Negronis or smoky mezcal).
Here are the drinks that work for summer gatherings — from backyard barbecues to pool parties to rooftop get-togethers.
Batch Margaritas (Serves 10)
20 oz blanco tequila, 10 oz fresh lime juice, 7.5 oz Cointreau, 5 oz simple syrup, 5 oz water. Mix in a pitcher, refrigerate. Serve over ice with salt rims.
The water accounts for dilution you'd normally get from shaking. Juice the limes the morning of — don't do it days ahead or the juice loses brightness.
Aperol Spritz Station
Set up: a bottle of Aperol, several bottles of Prosecco, soda water, ice bucket, wine glasses, and sliced oranges. Let people make their own (3-2-1 ratio card helps).
This is the lowest-effort party drink setup. No shaking, no measuring stress, and everyone loves a Spritz. Buy 2 bottles of Aperol and 4-5 bottles of Prosecco for 12 people.
Watermelon Punch (Serves 12)
Blend a whole seedless watermelon, strain the juice (you'll get about 8 cups). Add 12 oz vodka or tequila, 4 oz fresh lime juice, 3 oz simple syrup. Serve from a punch bowl over a large ice block.
Garnish the bowl with mint sprigs and watermelon wedges. It's beautiful, refreshing, and the watermelon does most of the work.
Paloma Pitcher (Serves 8)
16 oz blanco tequila, 4 oz fresh lime juice, 2 oz simple syrup. Mix in a pitcher. When serving: pour 2.5 oz of the base over ice, top with grapefruit soda (Squirt or Jarritos).
Keep the soda separate until serving — it goes flat in a pitcher. Tajin rims for anyone who wants them.
Frozen Frose Machine
Freeze a bottle of dry rose flat in a sheet pan overnight. Blend the frozen rose with 5 strawberries, 1 oz simple syrup, 1 oz lemon juice. Serve immediately.
For a party: make 3-4 batches and keep them in the freezer in containers. Pull one out every 30 minutes as the previous batch runs out. They stay slushy for about 20 minutes once out.
Beer & Michelada Bar
For the beer drinkers: set up a Michelada station. Clamato or tomato juice, hot sauce (Valentina, Tapatio), Worcestershire, lime wedges, Tajin, and a cooler full of light Mexican lagers (Modelo, Tecate, Pacifico).
People build their own to their spice preference. It's interactive, fun, and keeps the beer drinkers happy while cocktail people do their thing.
Party Planning Math
For a 3-hour summer party with 15 people: plan for 3-4 drinks per person = 45-60 total drinks. That's roughly 3-4 pitchers of batch cocktails plus a self-serve station.
Buy 25-30 pounds of ice (more than you think). Set up drinks in the shade — direct sun melts ice and warms everything. Have plenty of water available (people forget to hydrate in the heat).
Start with lighter drinks (Spritzes, Palomas) and have the stronger stuff (Margaritas, punch) available but not pushed. Let the party find its own energy level.
